Blending : 80% Sémilion, 15% Sauvignon, 5% Muscadelle
Soil : Clay-chalk

Vinification

Harvested by hand, the grapes are pressed as soon as they arrive in the winery to extract the juice, the flavours and the sugar. The winery master then practices alcoholic fermentation that transforms the sugar into alcohol. The particularity of the Sauternes is that the proportion of sugar is so high, compared to the other wines, that when the process is over, it is still important which give this onctuous sensation on the palate.

Sensory characteristics

COLOUR : Very lovely straw yellow colour.
NOSE : The nose is of a unique richness mixed with the subtle combination of citrus, fruits, spices, white flowers and honey.
PALATE: The flavours unveil themselves gradually one after the other. On the palate, the wine is well balanced between sweetness and freshness. It is an excellent rich flavoured wine.

Recommandations

Such a wine is the ideal accompaniment to an aperitif, with saffron cheese pastries, and also with a foie-gras based starter, white meat and poultry roasted with candied lemon, sweetbreads with wild mushrooms, roquefort cheese and tropical fruit desserts or a yellow peach tart.

Serving condition in C°​ : 8 – 10°C
Cellar potential : 4 to 10 years with evolution of the sensorial profile.
