Vinification
This wine has been elaborated with grapes from organic agriculture. The grapes, once harvested and removed from the stalk, undergo cold pre-fermentation (5°C) before alcoholic fermentation at low temperature in order to bring out the fruit aromas. Regular and short over-pumping allow to extract the tannins, the colour and the aromas. This method smoothes the aromas of a low tannin wine and obtains a lovely freshness and lightness. Finally, malolactic fermentation and ageing in tanks allow us to obtain a full-bodied wine.

COLOUR : | Ruby colour with blue-tinged reflections. |
NOSE : | Intense nose with morello cherry and red fruits such as raspberry or red currant. |
PALATE : | A smooth, round palate with red fruits aromas and fresh mint with suave tannins. The end note is round and long-lasting. |
Recommandations
To be enjoyed with meats in sauce, a cold meat platter, a gratin dauphinois, pan-fried wild mushrooms and strong cheeses such as coulommiers, emmental and neufchâtel.
