Aubergine Caviar Toast
Preparation and cooking time: 45 minutes
Rest time: 2 hours
- 2 large aubergines
- 10 cl of olive oil
- 6 cloves of garlic
- Ground pepper
- Curry powder
Wash the aubergines and cut off the ends. Then cut them in half lengthwise. Salt and pepper them and add some curry powder to the aubergine halves. Push the garlic cloves cut into big pieces into the flesh. Pour over the olive oil before wrapping in foil. Place the foil wrapped aubergines in the oven for 60 minutes at 170°C.
Remove them from the oven and remove the aluminium foil. Using a spoon, remove the flesh and put it in a blender and pepper it. Grill the slices of bread. Serve the caviar in a small bowl so that every guest can make their own toasts.
